These delicious cookies are very easy to make and extremely healthy! Enjoy as a special treat or take some with you as a quick post work out protein snack!
Made with all natural ingredients and with a special rolled oats and almond flour blend which you are going to love!
Ingredients:
- 2 cups rolled oats – gluten free
- 1 cup almond flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- sprinkle of sea salt
- 1/2 cup organic coconut palm sugar
- 1/2 cup organic raw coconut oil
- 2 eggs
- 1/2 cup applesauce *
- 1 tablespoon vanilla extract/vanilla bean
- 1/2 cup raisins (optional)
- 1/2 cup cocoa nibs (optional)
*You can easily make your own applesauce by blending:
- 3 medium size apples, peeled and quartered
- 1 tablespoon of apple cider vinegar (or lemon juice)
- 1 pitted date or 1teaspoon of vanilla extract)
- 1 teaspoon of cinnamon
Method:
Heat the oven to 175C
Put the oats in a food processor and grind until it has a texture of half flour/half oats
In a bowl, add all the dry ingredients and mix
Add in all the wet ingredients
Roll into balls and place on a baking tray that is lined with baking paper
Cook for 12-15 minutes
Makes 10-12 cookies
