This is the perfect recipe for all of you healthy chocolate lovers out there! It’s very quick and easy to make and it’s sure to become a favourite!

 

Healthy Almond Base
• 1.5 cups of almond flour
• 1/4 teaspoon sea salt/Himalayan salt
• 1/4 teaspoon baking soda
• 1/4 cup coconut oil
• 1 T honey
• 1 teaspoon vanilla
Creamy Chocolate Filling

• 1/2 cup cocoa
• 3 T honey
• 1/4 cup coconut flour
• 2 egg yolks
• pinch of sea salt/Himalayan salt
• 2 cups rice/coconut/almond milk
• 1 teaspoon vanilla

Method

For the base:
1 Preheat the oven to C 175
2 Combine the almond flour, salt, and baking soda
3 Combine the coconut oil, honey, and vanilla extract
4 Stir in the wet ingredients to the dry ingredients until well combined
5 Here’s your yummy base! Press the base into a pie pan
6 Bake for 12-15 minutes until golden brown
7 Remove from the oven and allow to cool
For the filling:
1 In a pot combine the cocoa, coconut flour, beaten egg yolks, honey, vanilla, and salt over medium high heat
2 Gradually add the milk and stir it in
3 Keep stirring until the liquid becomes very thick. It will feel like it will never thicken. Hang in there. It will! It will take about 10-15 mins, but keep stirring, and stirring, and have patience
4 When it is thick, pour it into your base
5 Put it in the fridge to cool
As soon as this pie firms up (1-2 hours), it is ready to enjoy!
